Another event has hit the blogosphere waves and the culinary host behind this fun food party is our blog friend, Wandering Chopsticks. On her scrumptious site, she explores cuisines from all around the world, but her emphasis on Vietnamese cuisine is tastefully shared on an almost daily basis. I was in Downtown LA for an intensive business meeting and all the furious day’s hectic, corporate challenges were soon forgotten when I met up with WC. She was like a breath of fresh air, a free spirit and quickly escorted me throughout her uncles’ gardens full herbs, vegetable and fruit trees to make any garden enthusiast envious.
If you don’t already know, Todd and I are gardening fanatics and seeing the splendor of her families garden made me aching to have more soil space. After the lush garden tour, she whisked me away to the her favorite eateries in San Gabriel and Monterey Park, all of which were OUTSTANDING. She knows where the good food is hiding and generous enough to share all that with me. I found my new eating partner in crime and we indulged in a 3 hour food fest that left me in a deliriously happy food coma. Unfortunately Todd was unable to join us and had to live through my eating pleasures via the left overs that I brought home. But he’s a simple, humble guy and as long as I brought something home, he was happy for me. He thoroughly enjoyed every bite of the left overs. Now this busy food enthusiast has now created a monthly event that is cleverly called, Weekend Wokking where everyone makes a dish on the one ingredient that she has chosen to be the theme for that month. We’re excited about this months theme of Asparagus because we’re in the middle of the menu planning for our big party on of about 60 people this Saturday and asparagus was on our minds. We’re planning on making our minted red rice salad again for the party and decided to add asparagus to this salad, inspired by Weekend Wokking.
Previously, I’ve written about the joy’s and memories that red rice brings me and this refreshing summer salad will go perfectly with the sauteed asparagus. With so many dishes planned ahead, this red rice salad is easy, delicious, unique and visually appealing to the masses of hungry guests. Always having garden mint on hand, the herb addition brightens up the nutty textures and flavors of the red rice . Along with a large bag of red rice stocked in our pantry, this salad is pretty much ready to go for Saturday. All we need to do is purchase some asparagus to replace the cucumbers in the original recipe and we’ve achieved another dish down for the count!

Minted RED RICE and shallot-soy dressing recipe
Just replace the cucumbers with asparagus prepared in your favorite way. We quickly sauteed the sliced asparagus with a little sesame oil for this dish.
Ingredients:
1 cup raw red rice
2 1/2 cups water
1 cup diced cucumbers
1/4 cup chopped parsley or cilantro
1/4 cup chopped mint leaves , or even more to your specific taste
Soy Dressing:
4 tablespoons minced shallots
3 medium garlic cloves , crushed, then minced finely
2 tablespoons olive or grape seed oil
2 teaspoons sugar
2 1/2 tablespoons soy sauce
3/4 teapsoons sesame oil
1/4 teaspoon salt
1 tablespoon rice vinegar
1 tablespoon lemon juice
1 teaspoon fresh cracked black pepper
1. In colander, rinse rice grains under water to clean grains of any residue. In heavy sauce pan, add water and rice. Bring to boil, then stir rice once and reduce heat to low. Cover pan but leave a slight opening for air to escape. Cook for about 45 minutes, fluffing rice about 3 times during this period. If rice is not cooked fully once water evaporates, add a little more water and cook till rice becomes soft. Once water is cooked away, turn off heat, fluff rice one last time and place lid tightly over pan for another 30 minutes. This will steam the rice even further for the final cooking time.
2. In sauce pan over medium-low heat add oil and cook shallots and garlic until a light golden brown. Turn off heat and add sugar, soy sauce, sesame oil, salt, vinegar, lemon juice and cracked black pepper. Stir till sugar dissolves and all ingredients are mixed together. Put aside to marinade further while you prepare vegetables and herbs.
3. Dice cucumbers and mince parsly (or cilantro) and mint.
4. For a cold red rice salad, let rice cook completely and refrigerate dressing. Toss cucumbers and herbs with rice and chill. Before eating, toss again with dressing to enhance flavor of rice.
5. For a warm red rice dish, toss cucumbers and herbs with warm rice. Heat up dressing in sauce pan till warm and toss with rice. Serve immediately.
6. Makes about 4 cups of cooked rice. Serves 5-8

Live Web CAM!!!! Wanna party with us?
We really want to invite all of you to our party on Saturday too and would love to have you all join in on the festivites with us. Our thought is to have a live web cam of the party on Saturday beginning at 2 pm Western Time. But as of now, we know nothing about having a live web cam. Do any of you computer tekkies out there have any advice for us? on equipment? Set up? Software? If so, please share with us your expertise and if we can gather all this in time for Saturday…you can all join us for the party!!!

Wow, I don’t think I’ve seen red rice before, but it looks great with the green veggies. Mint and asparagus seem odd at first, but I can see how they would work together to be very tasty!

Live web party sounds interesting–I have no idea how to attend.
a live web cam is a fabulous idea! it makes me wish i were more technologically savvy. as it is, i’m lucky i’m able to turn my computer on in the mornings.

I’ve never really known what to do with red rice. Occasionally there’s some in my pantry, but I end up doing boring things with it. I’m definitely going to try it your way — and it’s so beautiful with the green of the asparagus.

what gorgeous pics. by red rice you mean bhutanese red rice, right? it is fantastic, and almost 100% organic, ‘cos the farmers up in the Himalayas don’t use pesticides and fertilisers. that may change, though.

This recipe has two of my favorite foods, red rice and asparagus, in it. I’ve never tried stir frying them together. I’ll have to give it a try. Looks scrumptious.

you should check out stickam for the live web cam thing; it’s an online service like youtube that provides a way to stream live videos. I’ve never used it, but let me know if you get it to work : )
