
Dad’s pride and joy is his Kent Mango tree and it’s prized fruit, well, all 3 of the fruit to be exact. I’ve been eying them for the past several months, wondering which one of us 6 kids would have the honor to inherit one of it’s valuable, huge fruit. Dad usually always eats 2 by himself, and it’s a well deserved reward for nurturing this plant to fruit in an unlikely habitat for mango trees. That leaves just one left to the lucky bastard who tops his “buddies” list. I figured it would go to Mr. Thuan, his very “best-est” friend from his early days in the South Vietnamese Navy. It’s only appropriate that Mr. Thuan receives the honor, being that he survived a war torn country, immigrated to this country with only the clothes on his back, raised 4 kids, survived cancer (twice), survived his wife’s fight on cancer (once) and shares his prized guavas with my Dad.

But lo and behold what gift my dear, dear Father brought to us on Thanksgiving… The Mango! We were the lucky bastards! (Sorry Mr. Thuan, maybe next year). Now that this precious commodity was in our hands, what can we do with it? Eat it of course! And we did devour half this fruit straight off the skin. But this gigantic monster of a mango was so fleshy, we realized that one “cheek” was enough to create something different. But what? Something simple, something that wouldn’t compete with the already sweet and freshness of the mango. How about some simple, smooth whipped cream? Not too sweet the cream should be and maybe add just a touch of rum to help add a different layer of sweetness to the mangoes. There it is… Mangoes and Rum Cream. A great, simple dessert.

Ingredients:
1 ripe mango
1/2 cup heavy whipping cream
dash of Vanilla to taste
Powdered sugar to taste
Rum to taste
1. Slice mango into it’s two cheeks. Make criss/cross cuts into the mango cheeks, without cutting through the skin. Invert cheeks to push out the mango squares. Cut off all squares and set aside.
2. In bowl, combine heavy whipping cream, vanilla, powdered sugar and rum. Whisk briskly until cream forms soft peaks.
3. In dessert bowl or glass, layer mango with whipped cream.
