Don’t these look D.E.L.I.C.I.O.U.S ??? Let us tell you, yes! These plump and fresh Vietnamese Spring Roll rice paper rolls, filled with fresh Vietnamese herbs, were quite the satisfying lunch.  We made them for a post on Rasa Mayasia’s blog! She asked us to be a guest writer and we decided that these were the perfect Vietnamese inspired dish to make and share with everyone.

They do look delicious – I love the lightness and freshness of Vietnamese rice paper rolls when compared with Chinese style spring rolls.
