Shrimp Stir Fry with Sugar Snap Peas – Snow & Sugar Pea Garden Monster

There’s an uncontrollable beast on the North end of the garden and it actually comes in two forms: sugar snap peas and snow peas. Our spring peas are like serpants, clinging to everything they can get their tendrils on. Once they latch on, pea flowers shoot out and within 3-4 days, we have fresh peas to munch on. As a matter of fact, the warm sun is encouraging way more pea growth than we can ever imagine so it’s snow pea and sweet pea recipe overload!

Roasted Radish and Greens Salad – A friendly food fight

We were talking to a friend about radish recipes and she swore up and down that the only way to eat radishes was raw, crunchy and fresh. There was no other option to eating radishes, raw was it, she declared. She’s a great gardener, cook and mom. Her dedication to family, food and a healthy lifestyle is admirable. I’m guilty and fessing up to the fact that I often drown my salads in dressing. Simple, crisp and fresh salads are my favorite ways to eat greens, sans all the complicated toppings. The extra toppings often get in the way of my favorite greens. But to contradict myself in a bowl of lettuce, I’ll often plunge the delicate leaves in a bath of oil and vinegar, suffocating my salad in excess dressing. Bad me, bad.

Dragon Fruit Salad – Antioxidant High

Holy cow, we had a ton of dragon fruits this year! The beastly vines have finally matured and almost every node gave off an odd-ball looking fruit. What a spectacular sight they are and it’s especially fun when friends come over and stumble upon the dragon fruit vines  breathing fiery rows of red balls. Everyone’s mouths drop to the ground, their eyes bulge out and then the exclamations spew out — “Holy $%%^! What the &*%$ are those?”  Oh yeah, we love it when people get excited!

I have my little red seasonal joys, those tiny flavorful things that are plentiful this time of year—-pomegranate arils! These juicy, tangy, sour, sweet pops of flavor are such perfect accompaniments to salads. It’s amazing how simple additions can change the whole dynamic of a salad.
